I love making my own almond milk-what I am not such a fan of is figuring out ways to use up the leftover pulp.
I have tried a few different recipes in the past, but never really fell in love with any use for the almond pulp, until now…
I decided I would try and make some energy balls using the pulp and they turned out better than I could have expected. I’ve made a few variations on these, so feel free to sub/add in whatever ingredients you have on hand, I’m sure they would work equally well with any other nut/seed pulps, nut butters, dried fruits or powders and can be rolled in any combination of super-foods.
They didn’t last a very long time, although I froze some and they were equally delicious from frozen. Great for a little boost during the day or for a pre workout energy lift.
- Pulp from 1 cup of almonds used to make Almond Milk (1-2 cups)
- 12 Medjool Dates
- 4 Tbsp Raw Almond Butter
- Pinch of Salt
- Tsp of Cinnamon
- 1 Vanilla Pod or 1 tsp Vanilla Extract
- 1/2 cup combination of Chia Seeds, Shredded Coconut, Hemp Seeds
In a food processor combine the dates, salt, vanilla and almond butter for a few minutes until the mixture comes together and has a smooth creamy texture. Add the almond pulp and process to combine, it should come together into one giant ball of raw dough! If it doesn’t add more dates or a dash of almond milk to bring it together.
In a small bowl combine chia seeds, shredded coconut and hemp seeds. Roll the dough into balls and roll the balls in the super-food sprinkle. Place in the fridge or freezer for a few hours.
The recipe made somewhere between 20-30 balls, I can’t remember exactly- which shows that they didn’t last very long! Now I need to make more almond milk so I can make some more!
